About the Position: The Chef plays a pivotal role at Java Spice World Pty Ltd, leading the kitchen team to deliver high-quality, authentic Thai and South East Asian dishes that delight customers through both dine-in and take-away services.
This full-time position encompasses creative menu development, precise culinary execution, efficient kitchen operations, and team leadership to maintain the restaurant's reputation for excellence, consistency, and profitability while upholding strict food safety and hygiene standards.
Key Responsibilities: Prepping ingredients, cooking menu items,
and assembling dishes according to established recipes and plating standards.
Designing seasonal menus, testing new recipes, and updating offerings based on ingredient costs, availability, and customer feedback.
Inspecting all dishes before they leave the kitchen to ensure they meet quality, taste, and presentation standards.
Taking stock of raw materials, tracking shortages, and placing orders with suppliers while managing food and labour costs to minimise waste.
Directing the work of junior chefs, line cooks, and kitchen porters; delegating tasks, training, and mentoring staff on food handling, safety, and techniques.
Enforcing strict health, food safety, sanitation regulations, and allergen control procedures across the kitchen.
Organising duty rosters and ensuring the kitchen is fully staffed during peak hours while maintaining equipment.
Requirements : Australian citizens and permanent residents are encouraged to apply.
Certificate IV in Hospitality (Commercial Cookery) or equivalent.
Minimum 1 year relevant experience.
Strong technical skills in Thai/South East Asian cuisine preparation, menu development, cost control, and kitchen management.
