This creates an exciting prospect for an experienced culinary leader to work across a dynamic hotel operation and play a key role in maintaining exceptional food quality and service standards across multiple dining formats.
About the Role:
We are seeking an experienced and driven
Executive Sous Chef
to join the culinary leadership team at Crowne Plaza Surfers Paradise.
Working closely with the Executive Chef, you will play a key role in overseeing the day-to-day culinary operation across the hotel's restaurants, banquets, conferences and events, ensuring consistently high standards of food quality, presentation and service.
This is a hands-on leadership role suited to an experienced Executive Sous Chef, Head Chef or senior culinary leader who thrives in a fast-paced hotel environment and has a proven ability to lead high-performing kitchen teams across high-volume operations.
You will be instrumental in supporting the Executive Chef, developing and mentoring the culinary brigade, maintaining operational standards and ensuring exceptional food experiences across every service.
Key Responsibilities:




• Support the Executive Chef in overseeing the day-to-day culinary operations across the hotel
• Lead and motivate the kitchen brigade to consistently deliver exceptional food quality, presentation and service
• Oversee high-volume restaurant, buffet, banquet, conference and event operations
• Ensure menus and food offerings are executed consistently and to the highest standards
• Work closely with the Executive Chef on menu development, seasonal offerings and culinary initiatives
• Assist with rostering, labour management, food costs, stock control and ordering
• Coordinate kitchen operations across multiple service periods and outlets
• Ensure all food safety, hygiene, HACCP and WHS standards are consistently maintained
• Train, mentor and develop chefs and kitchen team members, fostering a positive and high-performing team culture
• Maintain strong communication and collaboration with Food & Beverage, Events and Hotel leadership teams
• Take responsibility for the kitchen operation in the absence of the Executive Chef
• Identify opportunities to improve efficiency, consistency and overall culinary performance
About You:
• Previous experience as an Executive Sous Chef, Head Chef or in a similar senior culinary leadership role within a premium hotel or high-volume hospitality environment
• Experience in a similar or higher-level role, with a proven ability to lead large and high-performing kitchen teams

Strong experience in buffet and banquet operations, including high-volume conference and event service
• Proven ability to deliver exceptional food quality,



consistency and presentation across multiple service styles
• Strong understanding of hotel kitchen operations and the ability to manage competing priorities in a fast-paced environment
• Excellent leadership and people development skills, with the ability to motivate and mentor a diverse culinary team
• Strong knowledge of food safety, HACCP, WHS and kitchen operational standards
• Sound understanding of food costs, labour management, stock control and kitchen efficiencies
• Highly organised with excellent communication and problem-solving skills
• Passionate about food, hospitality and delivering exceptional guest experiences
• Flexible availability across a rotating seven-day roster, including evenings, weekends and public holidays
