About the role

Satay Ria is a well-established Malaysian Chinese restaurant known for authentic flavours, fresh seafood and a broad dine-in, takeaway and functions offering. We are seeking an experienced full-time Chef to join our kitchen team and help deliver consistently high standards across preparation, cooking, presentation and service.

- · EMPLOYMENT: Full-time
- · LOCATION : Cannon Central 8, 1145 Wynnum Road, Cannon Hill QLD 4170
- · SALARY: AUD $80,000 per annum plus superannuation. A higher salary may be offered to an exceptional candidate depending on qualifications, skills, experience and the applicable annual market salary rate.

Key responsibilities

- · Plan, review and develop menus, seasonal dishes and daily specials in consultation with management, taking account of customer demand, ingredient availability and the restaurant's established Malaysian Chinese style.
- · Estimate food and ingredient costs, contribute to labour-cost planning, monitor kitchen expenditure and implement practical cost-control and waste-reduction measures.
- · Plan and organise the preparation, cooking and presentation of dishes for dine-in, takeaway, functions and catering services.
- · Prepare and cook authentic Malaysian Chinese dishes using appropriate recipes, wok techniques, timing and presentation standards.
- · Monitor the quality, flavour, portioning and presentation of dishes at all stages of preparation and service, and take corrective action where required.
- · Order food supplies from approved suppliers; check deliveries for quality and accuracy; and manage stock rotation, storage levels and inventory records.
- · Supervise and coordinate kitchen staff during preparation and service to support an efficient workflow and timely delivery of meals.
- · Demonstrate cooking techniques,



advise kitchen staff on food preparation and cooking procedures, and assist with the selection, induction and training of new kitchen staff.
- · Liaise with restaurant management and front-of-house staff regarding menu availability, customer requests, dietary requirements, service priorities and food preparation issues.
- · Apply and enforce food safety, hygiene, allergen-management, temperature-control, cleaning and safe-storage requirements, including the restaurant's HACCP procedures.
- · Maintain a clean, organised and safe kitchen and ensure equipment is used correctly and reported for maintenance when necessary.
- · Support continuous improvement by responding professionally to customer feedback and contributing ideas to improve menu quality, kitchen efficiency and consistency.

Skills and experience

- · A relevant commercial cookery or hospitality qualification, such as a Certificate IV in Commercial Cookery, Diploma of Hospitality Management, or an equivalent qualification; relevant experience may be considered where appropriate.
- · At least two years of relevant experience as a Chef in a busy commercial kitchen.
- · Demonstrated experience preparing authentic Malaysian Chinese cuisine, including strong wok-cooking skills and sound knowledge of traditional ingredients, flavours and techniques.
- · Sound knowledge of menu planning, food costing, ordering, inventory control, portion control and waste management.
- · Strong understanding of food safety, hygiene and HACCP-based kitchen procedures.
- · Ability to supervise and train kitchen staff, communicate effectively with management and front-of-house employees, and remain organised under service pressure.
- · Availability to work a flexible roster, including evenings, weekends and public holidays as required.
