Essential Requirements
Full Australian working rights.
Current NSW RSA Competency Card.
Previous experience in a waiter, bartender, runner, sommelier or similar front-of-house role.




A passion for delivering exceptional customer service.
Strong communication and interpersonal skills.
Excellent grooming and professional presentation.
Ability to work efficiently in a fast-paced environment.
Ability to carry three plates (Waiters and Runners).
Sound food and beverage knowledge.
Experience using POS systems is advantageous.
Availability to work evenings, weekends and public holidays.
Desirable Requirements
Previous experience in premium or fine dining.
WSET Level 2 or higher (or equivalent wine studies) for Sommelier applicants.
Knowledge of Italian wines, spirits and regional Italian cuisine.
Cocktail experience for Bartender applicants.
Experience with SevenRooms or similar reservation platforms.
Italian language skills.
Previous experience in a Good Food Guide Hat or Michelin-standard restaurant.
Key Responsibilities
Deliver warm, genuine and professional service to every guest.
Provide knowledgeable food and beverage recommendations.
Prepare and serve beverages to venue standards (Bartenders).
Present and serve wine with confidence (Sommeliers).
Manage a section efficiently during service (Waiters).
Deliver food and beverages accurately and efficiently (Runners and Waiters).
Maintain exceptional venue presentation and cleanliness.
Work collaboratively with the kitchen and front-of-house teams to deliver seamless service.
Comply with all food safety, liquor licensing and workplace health and safety requirements.
Assist with opening, closing and general operational duties as required.
