Key Responsibilities

- Lead and develop a high-performing bar team in a premium fine dining workplace
- Create and execute a seasonal, creative cocktail list aligned with Bennelong’s food and wine offering
- Manage daily bar operations with consistency and attention to detail
- Oversee stock control, ordering, and cost management
- Collaborate closely with sommeliers and restaurant leadership
- Deliver exceptional guest experiences in a high-volume, refined service setting

What We’re Looking For





- 2+ years’ experience as a Bar Manager in fine dining or premium restaurants
- 5+ years’ experience working in a fine dining restaurant in various roles, including Management positions
- Strong knowledge of cocktails, spirits, and contemporary beverage trends
- Proven leadership skills with a focus on training and team development
- Excellent communication, organisation, and service standards
- Ability to remain calm and consistent under pressure
- WSET Level 2 or higher (preferred)
- Full Australian working rights
- Availability to work nights and weekends
