Intuition Wine & Kitchen, located on vibrant Rokeby Road in Subiaco, offers a refined fusion of Modern Mediterranean cuisine with an elegant French twist. We are seeking an experienced and qualified Sous-Chef to join our dynamic team and support the delivery of high-quality dishes in a fast-paced, creative kitchen environment.
Key Tasks & Responsibilities
- Assisting the Head Chef with daily kitchen operations, including menu execution and service coordination
- Supervising and guiding kitchen staff to ensure high culinary standards are consistently met
- Preparing, cooking and presenting dishes across all sections of the kitchen
- Contributing to menu planning, seasonal dish development and specials
- Ensuring all food is prepared in accordance with recipes, presentation standards, and quality expectations
- Monitoring stock levels, placing orders and managing inventory efficiently
- Maintaining strict compliance with food safety, hygiene regulations, and workplace health and safety.
Requirements
- Formal cookery qualifications (e.g., Certificate IV in Commercial Cookery or equivalent)
- Minimum 2–3 years’ experience in a similar senior role
- Strong knowledge of Mediterranean and/or French cuisine
- Excellent leadership, communication and organisational skills
- Ability to work under pressure and deliver consistent results
- Strong understanding of food safety standards and HACCP procedures.
