HBH Group runs a growing group of hospitality venues across Brisbane's north, including Bubba Gump Shrimp Co. Sandgate, Gorilla Grind Café and Food Trucks, and Deux M Wine Bar and Café. We're now opening a new central commercial production kitchen in Brendale to handle bulk prep for all our venues. This is a new role, and you'll help shape it from day one.

The role

As Production Head Chef, you'll lead the kitchen that supplies our venues. You'll make sure every batch is consistent, safe, costed correctly and delivered on time. You'll work closely with our venue head chefs and managers to plan production around each venue's needs.

What you'll do

Plan and run daily production, including bulk prep, batching and portioning

Develop, standardise and document recipes, specs and yields

Lead, train and motivate the production team

Build and manage rosters within labour budgets

Manage stock, ordering and receiving, and keep waste to a minimum

Keep food safety,



labelling and HACCP standards in place

Help set up the systems, processes and workflows for a brand recent kitchen

What you'll bring

Proven experience in production or high-volume food preparation

Strong batching, recipe development and costing skills

Solid leadership experience running a kitchen team

Rostering and labour management experience

Well organised, reliable and focused on consistency

Able to start early and work shift work

Food Safety Supervisor certificate, or willingness to get one

A rare chance to build a production kitchen from the ground up

Mostly early starts, with more regular hours than a typical restaurant kitchen
