A busy waterfront breakfast and lunch café in Hastings is seeking a strong and experienced Senior Chef de Partie / Junior Sous Chef to join our leadership team.
This is a senior kitchen position suited to someone who is ready to take ownership, lead by example, and support the Head Chef in the day-to-day operation of the kitchen. The successful candidate will be capable of running service independently and confidently managing kitchen operations in the Head Chef's absence.
Key Responsibilities
- Support the Head Chef in all aspects of kitchen operations
- Lead and coordinate kitchen staff during preparation and service
- Run sections efficiently while maintaining quality, consistency and presentation standards
- Manage and execute busy breakfast and lunch services in a fast-paced environment
- Oversee daily prep lists and ensure adequate mise en place for service
- Train, mentor and support junior chefs and kitchen hands
- Monitor food quality, portion control and service standards
- Assist with stock ordering, receiving and inventory management
- Minimise food waste and maintain food cost targets
- Ensure compliance with food safety, hygiene and workplace procedures
- Open and close the kitchen when required
- Confidently run the kitchen and lead the team in the absence of the Head Chef
About You
- Minimum 3–5 years of professional kitchen experience
- Previous experience as a Senior Chef de Partie, Chef de Partie or Junior Sous Chef
- Strong breakfast and lunch café experience highly regarded
- Proven ability to lead a team and manage busy services
- Excellent communication and organisational skills
- Strong time management and multitasking abilities
- Ability to remain calm and decisive under pressure
- High standards of cleanliness, food quality and presentation
- Reliable, qualified and committed to team success
- Strong understanding of food safety and kitchen management practices
