About MIINE
Newcastle Soho Miine Pty Ltd, trading as MIINE Newcastle, is a contemporary Italian restaurant and hospitality venue in Newcastle, New South Wales. Alongside dine-in restaurant service, the venue offers cocktail and bar service and trades across lunch, dinner and evening periods, catering both to casual diners and to high-volume peak service.
The Role We are looking for an experienced Chef to join the kitchen team at MIINE Newcastle.
Working alongside our kitchen team, you will take responsibility for the day-to-day running of your section and for the standard of everything that leaves it, across lunch, dinner and evening service. The role carries genuine input into what goes on the plate: you will contribute to menu planning and seasonal menu development, manage ordering and food costs for the kitchen, and hold the line on quality and consistency through our busiest trade.
Key Responsibilities
· Planning menus, estimating food costs, and ensuring profitability while maintaining quality.
· Ordering ingredients and supplies in coordination with the head chef, ensuring inventory is maintained without overstocking.
· Monitoring the quality of ingredients and dishes at all stages of preparation and presentation.
· Building and maintaining relationships with suppliers to negotiate favorable terms and ensure consistent delivery of quality products.
· Assisting in the preparation and design of all food menus,
including seasonal menu creation, subject to approval by directors.
· Ensuring the kitchen operates efficiently and meets quality standards in a timely manner.
· Addressing and resolving any issues that arise in the kitchen, taking control of problematic situations as needed.
· Managing and training section staff, establishing work schedules, and assessing staff performance.
· Enforcing hygiene regulations, sanitation protocols, and safety standards.
· Maintaining a positive and professional approach in interactions with co-workers and customers.
· Managing and maintaining company cost of goods sold (COGS) and labor percentage targets.
Skills and Experience
- A level of skill commensurate with an AQF Associate Degree, Advanced Diploma or Diploma together with at least one year of
- relevant experience
- At least three years' relevant experience in lieu of formal qualifications
- Experience working in a rapid-paced, high-volume kitchen.
- Experience leading a kitchen team efficiently and productively, with a team-focused approach.
- Advanced food safety awareness and demonstrated compliance experience.
- Impeccable standards of health and hygiene.
- Strong time management skills.
- Availability to work evenings, weekends and public holidays as required.
Pay: $86,000.00 per year
