Located on Hamilton Island, The Palms offers a menu focused on smoked meats and grill items, with chefs working hands-on in a busy outdoor kitchen workplace. We're looking for a qualified Commis Chef to join the team and continue developing their commercial cooking skills. If you enjoy working with meats, want to build your confidence on the grill and thrive in a busy kitchen, this is a great opportunity to gain practical experience alongside an experienced culinary team. The kitchen operates outdoors and around significant heat, so you'll need to be comfortable working in these conditions throughout service.

What you'll be doing
You'll work hands-on across preparation and service, supporting your section and senior chefs with a strong focus on smoked meats and grill items. You'll prepare ingredients, cook dishes consistently to standard and develop your confidence working across a busy grill-focused service.
This is a physical role in a hot, outdoor kitchen environment. You'll need to stay organised, work efficiently and support the wider brigade to keep service moving while maintaining quality and consistency.
What we're looking for
- Certificate III in Commercial Cookery (Essential)
- Previous experience working in a commercial kitchen
- Grill experience or a genuine interest in developing your grill skills
- Experience preparing and cooking meats highly regarded
- Comfortable working around grills in a hot, outdoor kitchen environment
- Ability to follow recipes, preparation methods and plating standards consistently
- A positive attitude, strong teamwork and genuine desire to develop as a chef
