CHEF / GRILL COOK – TACO GRINGO
About the role
Taco Gringo is looking for an experienced
Chef / Grill Cook
to join our crew on a casual basis in Wandal, Rockhampton.
We make tacos, and we make a lot of them.
This role is for someone who enjoys a busy kitchen, is confident working a hot grill and can keep quality and consistency high when the docket rail starts filling up.
You'll primarily take ownership of our
grill and hot section
, cooking and finishing our Birria Beef, Al Pastor Pork, Chipotle Chicken and other Taco Gringo menu items while working closely with the rest of the kitchen to keep the menu items moving.
We have established recipes, systems and processes, so experience with Mexican food isn't essential. We can teach you at Taco Gringo; we're looking for someone who already knows how to work in a kitchen.
What you'll be doing
Running the
flat grill and hot section
during service
Cooking and finishing proteins including Birria Beef, Al Pastor Pork and Chipotle Chicken
Working with our Al Pastor trompo and other kitchen equipment
Heating and preparing tortillas for service
Managing fryers, hot holding and other equipment on the cook line
Keeping proteins and ingredients stocked and ready during busy periods
Working closely with our taco assembly team to keep orders moving quickly
Following Taco Gringo recipes, portion sizes and preparation procedures
Maintaining consistency across every order that leaves the kitchen
Completing prep before and between services
Monitoring stock levels, rotation and food storage
Maintaining a clean, organised and food-secure workstation
Helping the wider kitchen team wherever needed
Who we're looking for
You don't necessarily need to be a qualified chef.
We're more interested in finding someone who can
cook, move quickly and take ownership of their section.
Ideally, you'll have:
Previous experience as a Chef, Cook or Grill Cook in a commercial kitchen




Confidence working a grill and hot section
Experience working through busy, high-volume services
The ability to work quickly without sacrificing food quality
Valuable organisation and the ability to think ahead during service
An understanding of food safety, hygiene and safe food handling
Strong portion control and consistency
A positive attitude and willingness to help the team
Reliability and punctuality — if you're rostered, we need to know you're going to be there
Good communication skills and the ability to work as part of a small team
Availability across a flexible casual roster
Experience with
Mexican or Latin American food
is a bonus, but definitely not essential.

Our menu is built around tacos and Mexican street food, including
Birria Beef, Al Pastor Pork, Chipotle Chicken, tostadas, nachos, loaded fries, house-made salsas and more.
We focus on bold flavours, good ingredients, generous food and a fast, casual style of service.
