About the Role
As 2IC to the Executive Chef, lead the Cake Kitchen Production team at Braeside. Coordinate day and afternoon shifts to produce consistent, high-quality cakes and pastries for Laurent's cafes while developing people and improving efficiency.
Duties
Lead day-to-day Cake Kitchen production.
Coach Pastry Chefs and Kitchen Hands across day and afternoon shifts.
Coordinate production to meet cafe and customer demand.
Monitor quality, stock usage, labour and waste.
Maintain HACCP, GMP and workplace safety standards.
Skills & Experience
Sous Chef or Pastry Chef leadership experience.
Robust commercial pastry production knowledge.




High-volume bakery or food manufacturing experience.
Certificate IV in Patisserie or equivalent.
Australian working rights and availability across required shifts.
