For more than 150 years, The Full Moon Hotel has been a much-loved destination for locals and visitors alike. Positioned on the waterfront at Sandgate with sweeping views across Moreton Bay, the Full Moon combines a relaxed coastal atmosphere with the energy of one of Brisbane’s busiest hospitality venues.

About The Role
We are currently seeking an experienced and passionate Functions Chef to join our Kitchen team in a casual capacity.
Working as part of our Functions and Kitchen teams, you will play an important role in delivering high-quality food across our busy functions and events. From preparation through to service, you'll help ensure our guests receive a consistently high standard of food and service.
This is a hands-on role suited to a chef who enjoys variety, works well under pressure and takes pride in delivering quality food in a fast-paced environment.
Reporting to our Head Chef and working closely with our Functions Manager, you'll contribute to the smooth operation of functions while maintaining high standards of food quality, presentation, hygiene and safety.
Your day may include:
- Preparing, cooking and presenting food for functions and events
- Following function menus, recipes and established food presentation standards
- Completing food preparation and mise en place prior to service
- Working efficiently during busy and high-volume function services
- Assisting with the smooth running of kitchen operations during functions
- Working closely with the Functions and Front of House teams to ensure food service runs efficiently
- Maintaining high standards of food quality, presentation and consistency
- Ensuring food is prepared and stored in accordance with food safety requirements
- Maintaining a clean, organised and safe kitchen environment
- Assisting with stock rotation, storage and general kitchen duties
- Supporting the wider Kitchen team during busy periods and as required
To Be Successful In This Role You Will Need:
- Previous experience working as a Chef in a commercial kitchen
- Experience in functions, events or high-volume hospitality is highly regarded
- Relevant culinary qualifications are desirable
- Strong food preparation and cooking skills
- Ability to work efficiently and calmly in a fast-paced environment
- Strong understanding of food safety, hygiene and kitchen procedures
- Excellent communication and teamwork skills
- Ability to follow menus, recipes and presentation standards
- A positive attitude and willingness to support the wider kitchen team
- Reliability, professionalism and a strong work ethic
- Availability to work across functions, including evenings, weekends and public holidays
- A genuine passion for food, hospitality and creating memorable guest experiences
