Key responsibilities
- Prepare and cook authentic Indian dishes in accordance with Bikanervala recipes and brand standards.
- Maintain consistency in taste, portion control, presentation and food quality.
- Prepare traditional Indian sweets and Mithai where applicable.
- Prepare specialised Tandoor, South Indian, Indo-Chinese, Chaat or other Indian cuisine depending on your area of expertise.
- Work efficiently in a high-volume commercial kitchen setting.
- Maintain excellent kitchen hygiene, cleanliness and food safety standards.
- Follow standardised recipes, preparation methods and operational procedures.
- Assist with kitchen setup and operational systems during the opening and establishment phase.
- Work collaboratively with chefs, kitchen staff and management to maintain efficient service.
- Support the ongoing development of Bikanervala’s Melbourne operations.
About you
- Certificate IV in Commercial Cookery, Asian Cookery or equivalent qualification.
- Strong hands-on experience in a relevant specialisation, including Indian Sweets/Mithai, Tandoor, South Indian, Indo-Chinese, Chaat or Indian cuisine.
- Minimum 2 years of experience in Indian cuisine.
- Strong understanding of authentic recipes, ingredients, preparation techniques and kitchen processes.
- Ability to consistently maintain authentic taste, quality and presentation.
- Ability to perform effectively during busy and high-volume service periods.
- Strong work ethic, reliability and attention to detail.
- Ability to work effectively as part of a professional kitchen team.
- Positive and professional attitude.
- Strong commitment to food quality, hygiene, consistency and continuous improvement.

Competitive salary of $65,000–$80,000 per annum + superannuation.
