Hotel/Bistro located in Werribee is currently seeking the services of anexperiencedSous Chef to join our kitchen team on a Full time basis on a rotational roster covering day, night and weekend shifts.

We require an experienced person to join our team who lives, loves and breathes food.

n

Working closely with our current team of chefs, answering directly to the Head Chef, you'll play in important role in the day-to-day leadership of our kitchen to create a successful Bistro and Sports Bar menu

n

Role and responsibilities:

n

- Working alongside the Head Chef to delivery consistently high standards across every service
n
- Preparation of meals, ensuring presentation, portion control and quality is of the highest standard
n
- Contributing ideas and creativity to our menus and weekly specials
n
- Prepare and Store food items, ensuring stock rotation and control is maintained and wastage is limited
n
- Maintaining strict kitchen hygiene, following food safety protocol and workplace health and safety guidelines
n
- Stepping up and confidently leading the kitchen when the Head Chef is away
n




- Relieving and performing other duties as directed by the Head Chef or Management
n
- Consistently demonstrate professionalism, integrity, commitment, fairness and co-operation in all aspects of the above responsibilities
n

You will also have:

n

n
- Previous experience as a Sous Chef
n
- Experience in a high volume kitchen, with fine dining or quality restaurant experience strongly encouraged
n
- Sound cooking techniques, knife skills, time management and attention to details
n
- A strong understanding of food cost, seasonality and control
n
- Creativity and the confidence to contribute ideas, particularly around changing specials and seasonal dishes
n
- Outstanding communication skills and ability to work in a motivated cohesive team
n
- Availablity for Rotational Roster covering Day, Night and Weekend Shifts. Roster is Negotiable
n
- Completed your Do Food Safely certificate Home - DoFoodSafely (health.vic.gov.au) to
n
