About the role

The Bootlegger Bar Katoomba is seeking an experienced and qualified Chef to join our kitchen team on a full-time basis. Our menu features a range of smoked and grilled dishes, including smoked brisket, pulled pork, pork ribs, burgers, steaks, loaded fries, salads and other bar-style meals. The successful candidate will be responsible for preparing and cooking high-quality meals, maintaining consistency and presentation standards, supporting menu planning, and ensuring the productive day-to-day operation of the kitchen.

Key responsibilities
Prepare, cook and present menu items to a consistently high standard.
Prepare and cook smoked and grilled meats, burgers, steaks, ribs, side dishes and other menu items in accordance with established recipes and standards.
Plan and develop menus in consultation with management, including seasonal dishes and menu improvements.
Monitor the quality of dishes throughout preparation, cooking and presentation.
Ensure appropriate portion control, presentation and consistency of meals.
Estimate food requirements and assist with ordering ingredients,



supplies and kitchen stock.
Monitor stock levels, food costs, storage procedures and stock rotation to minimise waste.
Check the quality and freshness of ingredients and other food products.
Maintain appropriate food preparation, cooking and storage procedures.
Supervise and provide guidance to kitchen staff involved in food preparation and cooking.

About you
Minimum 3 years of relevant experience as a Chef in a commercial kitchen.
Relevant qualification in Commercial Cookery is compulsory.
Demonstrated knowledge of food preparation, cooking techniques and kitchen operations.
Ability to maintain consistent food quality and presentation standards.
Strong understanding of food safety, hygiene and secure food-handling requirements.
Ability to work effectively in a busy commercial kitchen.
Strong organisational, communication and teamwork skills.
Ability to work versatile schedule, including weekends and public holidays as required.
