Raku Dining is looking for a Chef experienced in Japanese cuisine to join our team.
Job Tasks and Responsibilities
We are seeking applicants who are professional and reliable with a passion for Japanese fine dining and a positive team attitude. As the Robata Chef, your role will include but not limited to the following:
- Work alongside other Chefs in the robata grill section, ensuring efficient preparation and delivery of menu items
- Prepare high-quality dishes consistently in line with restaurant standards and presentation guidelines
- Assist with menu planning, costing, and development of current dishes
- Manage mise en place and ensure all ingredients are ready for service periods
- Monitor food quality and portion control to maintain guest satisfaction and cost targets
- Supervise, train, and mentor Robata Chefs and apprentices
- Ensure compliance with food safety, hygiene, and sanitation standards (including HACCP)
- Conduct daily stock control, inventory checks, and assist with ordering supplies
- Maintain all workstations, equipment, and robata areas clean, tidy, and well-organised
- Work collaboratively with Sous Chef, Head Chef and Executive Chef to meet service demands
- Assist during peak service times in coordinating robata section workflow and timing
- Address and resolve issues promptly to uphold kitchen efficiency and guest satisfaction
Skills and Experience:
- Knowledge of Japanese cuisine
- Experienced in Fine Dining environment
- Regulate temperatures of ovens, grills and other cooking equipment.
- Prepare food for cooking.
- Cook food by a range of methods (i.e. baking, braising, frying, roasting or steaming).
- Divide food into portions and ensure that the food is well presented.
- Clean food preparation areas and equipment.
- Store food correctly in temperature-controlled facilities.
- Take stock of ingredients and equipment and place orders to replenish stock.
- Receive and store supplies.
- Prepare food to meet special dietary requirements
