Note: Given our small number of high-end rooms, the full-time kitchen operates as an elite 2-person team. With contract chefs for much larger weddings & events. Therefore, an amazing opportunity for growth and guest exposure, learning from one of Australia's most talented Executive Chefs.

Key Responsibilities

- Assist in overseeing aspects of the hotel's kitchen operations, ensuring the consistent delivery of exceptional cuisine. Work with the Executive Chef or sometimes given the responsibility & opportunity to work autonomously with the Sommelier & front-of-house to deliver smaller services (2-6 guests). Having the opportunity to verbally present courses to guests.

- Help deliver 3-course fine-dining experiences to a range of guest sizes (6-35), with a revolving menu, while engaging with the Head Chef, FOH to coordinate plating, timings & service.

- Handle smaller cafe-style gourmet breakfast menu for in-house guests and lunch options when needed.

- Work with the Sommelier and service staff, providing leadership and ensuring the highest standards of customer service





- Collaborate with the management team to develop and implement innovative food experiences that showcase the best of our local and seasonal produce

- 1-2 days a week, maintaining and expanding the farm produce garden, gourmet food gift shop items, and seasonally incorporating more locally grown elements through the kitchen, while enhancing the guest experience and reducing costs in addition to assisting the head gardener with overall grounds and maintenance management during quieter periods.

- Maintain a strong focus on cost control, inventory management, and overall food experience development

- Ensure compliance with all relevant health, safety, and food hygiene regulations

- Foster a positive, collaborative, and qualified work environment for the entire hotel team, helping out members when needed.

- Rising talent from a high-end fine dining restaurant or 5-star hotel or lodge environment

- Can work within a small team, autonomously when needed, be proactive and take responsibility for their part in delivering an unforgettable guest stay.

- Passion about gardens, growing produce and sourcing food from lakes, fields, rivers, farmers & nature.

- Assist with creative plating, ingredient use and delivering exceptional food experiences, yet fit within the Mount William style and brand.

- Strong understanding of food and beverage trends,



as well as a passion for using quality, locally sourced ingredients

- Excellent communication and interpersonal skills. Hardworking, kind, generous spirit, who is a team player and fits our business culture

- Relevant qualifications in Hospitality or Culinary Arts

- Open for a couple where your partner has either exceptional service skills, reception, strength in events coordination, or can work Back of House to help run the wedding season, dining experience, and hotel operations on a full or part time basis (candidate dependent).
