We are seeking an experienced Butcher / Smallgoods maker to join our team at The Mad Butcher Jandakot on a full-time basis.

About the Role

As a Mad Butcher butcher/smallgoods maker you will be responsible for preparing, producing, and packaging a wide range of processed meats including sausages, salami, ham, bacon, and other specialty smallgoods.

Tasks & Duties:
Prepare and process meat products including mincing, mixing, curing, smoking, cooking and drying.
Operate meat processing equipment such as mincers, mixers, stuffers, slicers, and smokers.
Follow recipes and product specifications to ensure consistency and quality.
Monitor and record production data, temperatures, and curing times.
Ensure all work is carried out in accordance with food safety regulations and HACCP standards.
Clean and sanitize work areas and equipment to maintain hygiene and safety.
Assist with inventory management, ordering,



and receiving ingredients and packaging.
Collaborate with the production team to meet daily and weekly production targets.
Maintain a clean, organized, and secure work environment.

Skills and experience:
Proven experience as a smallgoods maker, butcher, or meat processor (or willing to be trained).
Knowledge of meat handling.
Understanding of food safety standards and HACCP guidelines.
Ability to work in cold environments and handle physical tasks, including lifting.
Positive communication and teamwork skills.
Solid attention to detail and quality.
Trade qualifications (e.g., Certificate III in Meat Processing – Smallgoods) are desirable but not essential.

Pay: $79,423.00 – $85,000.00 per year
