Sydney By Kayak is an award-winning ecotourism business based in Lavender Bay.

As our business continues to grow, we’re expanding our breakfast team ahead of our busiest season.

Each morning, our guides and paddlers head out onto Sydney Harbour for our iconic Sunrise Kayak and Coffee experience. While they’re out on the water, you’ll be preparing the coffees for them to enjoy on the harbour. By the time they return, the Eco Hub will be ready with beautiful breakfasts, great coffee and a warm welcome.

We’re looking for someone exceptional to help create that experience.

About the role

You’ll play a key role in creating the morning experience our paddlers remember long after they’ve left Sydney.

Opening the Eco Hub before sunrise (in summer, this can be as early as 4am)

Preparing up to 40 exceptional coffees for our sunrise paddlers before they head out onto the harbour.

Making consistently outstanding coffee, including dialling in shots, texturing milk and maintaining our espresso machine.

Preparing and beautifully presenting our continental breakfasts, including fresh fruit platters, pastries, avocado toast, and freshly baked scones.

Welcoming paddlers back after their tour, chatting with visitors throughout the morning and creating a warm, memorable atmosphere.

Sharing the Sydney By Kayak story and confidently encouraging paddlers to leave a review.

Keeping the Eco Hub beautifully presented, stocked and running smoothly.

Managing food rotation, grocery shopping and stock levels.

Looking after all the little details that make a big difference, from watering the plants and wiping down tables to restocking supplies, cleaning the coffee machine, taking out the bins and spotting jobs before anyone else does.

What we’re looking for

This is a hands-on hospitality role,



so we’re looking for someone who already has:

Robust barista experience and confidence producing consistently high-quality coffee. Latte art is a bonus!

Food preparation and safe food handling experience.

Excellent spoken English and confidence engaging with people from around the world.

A proactive mindset and exceptional attention to detail.

A genuine love of hospitality and creating memorable experiences.

Someone who enjoys working autonomously, takes ownership and doesn’t need to be micromanaged.

You must be bubbly and social, capable of a warm conversation with paddlers.

Early starts are essential

Our signature sunrise tours begin before most of Sydney has even woken up, and so do we.

Early shifts in summer begin at 4am, when you’ll open the Eco Hub, dial in the coffee machine and prepare up to 40 coffees for our sunrise paddlers and guides before they head out onto Sydney Harbour for sunrise.

Once the sunrise tours have departed, you’ll help prepare and beautifully present breakfast before welcoming everyone back from the water.

This isn’t a role for someone who struggles with early mornings. It is perfect for someone who loves being up before the rest of Sydney, enjoys the buzz of a busy morning and likes finishing work with most of the day still ahead.
