Executive Chef, Ode to Sirens and Reuben’s Supper Club
Position Overview
We are seeking an Executive Chef to lead food operations across our multi-venue precinct in Fremantle’s West End. The role spans Ode to Sirens and the newly developed Reuben’s Supper Club and includes direct responsibility for the reopening of a new kitchen as part of the precinct’s redevelopment.
Reporting to the Head of Hospitality and working alongside the group’s leadership team, the Executive Head Chef will run day-to-day kitchen operations, develop a European-led menu, and establish the culinary foundations for the site’s continued growth. The role suits a chef who is genuinely passionate about cooking, values simple and honest food, and brings creativity to menu development and kitchen execution.
Key Responsibilities
Food Leadership
- Lead the day-to-day food operations across Ode to Sirens and Reuben’s Supper Club
- Lead the reopening of the new kitchen serving the multi-venue operation, with a primary focus on Ode to Sirens
- Direct the launch of Reuben’s Supper Club as a recent food offering in Fremantle
- Develop a European-led menu for Ode to Sirens built on quality produce, bold flavour and creative execution
- Maintain food quality, consistency, and presentation across every service
Operational excellence
- Manage kitchen staffing, recruitment, rostering, and team development
- Manage food cost, labour cost, and stock control performance
- Build and manage supplier relationships aligned with the group’s sourcing standards
- Ensure compliance with food safety, hygiene, and WHS requirements
- Develop systems and procedures to support the kitchen through the reopening and beyond.
Leadership and Culture
- Lead and mentor a high-performing kitchen team
- Build a positive, accountable kitchen culture with a focus on care and quality
- Coach and develop future kitchen leaders
- Work closely with venue managers and the wider leadership team on guest experience delivery
Skills and Experience
- Proven experience as a Head Chef or senior sous chef within quality-driven restaurants or hospitality groups
- Genuine passion for European cuisine and contemporary dining
- Track record of delivering simple, honest food executed to a high standard
- Strong commercial understanding on food cost, labour management, and kitchen performance
- Experience opening or reopening venues, or leading kitchen development projects, highly regarded
- Current food safety qualifications
