Icaro Holdings Pty Ltd Trading as Icaro are seeking an experienced Chef / Head Chef ANZSCO 351311 to lead our kitchen in Apollo Bay.

You will take full responsibility for menu development, kitchen operations, food quality and cost control, and the supervision and training of kitchen staff, delivering a high standard of seasonal, regionally-inspired cuisine for our guests and functions. We have a chef led kitchen operating as both a cafe, and a restaurant/wine bar with an ethos around fresh local and seasonal produce and high quality offerings.

Key duties and responsibilities

- Plan, develop and cost seasonal menus using regional and local produce
- Estimate food and labour costs and manage the kitchen budget
- Order, receive and inspect stock; manage relationships with local suppliers
- Prepare, cook and present a wide range of dishes to a consistently high standard, including à la carte, group functions and special dietary requirements
- Recruit, train, roster and supervise chefs, cooks and kitchen hands
- Maintain food safety, hygiene and WHS standards in line with the relevant Food Safety Program (HACCP) and Victorian food safety regulations
- Monitor the quality and presentation of all food leaving the kitchen
- Liaise with front-of-house and management on service standards, functions and event catering




- Maintain accurate kitchen records, stock control and wastage reporting

Selection criteria
- Trade qualification in Commercial Cookery (Certificate III or IV) or equivalent, or at least 3 years' relevant experience in a similar role
- Minimum 5 years' experience as a qualified chef, including demonstrated experience in a head chef or senior supervisory kitchen role
- Current Food Safety Supervisor certificate
- Proven ability to lead, train and manage kitchen staff
- Solid organisational skills and the ability to manage stock, costs and rostering
- Flexibility to work evenings, weekends and public holidays as required by a hospitality/tourism business
- Current Australian work rights required; visa sponsorship may be considered for a suitably qualified and experienced candidate
