The Carrington Hotel is a heritage-listed luxury hotel in the heart of Katoomba NSW 2750, renowned for its timeless elegance, historic Victorian architecture, premium dining, boutique accommodation, and exceptional hospitality. Featuring award-winning restaurants, bars, and versatile event spaces, The Carrington offers guests a unique blend of classic charm and modern comfort, making it a premier destination for dining, weddings, conferences, and leisure stays.
The Carrington Hotel is now looking for an experienced Cook to join their team.
The right candidate will be responsible for:
- Prepare and cook a variety of à la carte, breakfast, banquet, and function meals in accordance with established recipes and quality standards.
- Assist with the preparation and portioning of fresh ingredients, including meats, seafood, poultry, vegetables, and sauces.
- Work across different kitchen sections as directed to support efficient and timely food service.
- Follow recipes, cooking procedures, and plating guidelines to ensure consistency and presentation.
- Assist senior chefs with daily food preparation and service during busy periods.
- Maintain cleanliness and organisation of workstations, equipment, and food preparation areas.
- Monitor stock levels within assigned sections and notify senior chefs when replenishment is required.
- Receive, store, label, and rotate stock using FIFO (First In, First Out) inventory practices.
- Liaise with kitchen and front-of-house staff to ensure meals are prepared and served accurately and on time.
- Safely store, thaw, and handle food in accordance with food safety and hygiene regulations.
- Check food quality, cooking temperatures, and presentation before service.
- Follow all food safety, HACCP, and workplace health and safety procedures at all times.
- Assist with cleaning duties at the end of service to maintain a secure and compliant kitchen environment.
About you:
- At least 1 year of experience as a Cook;
- Sound knowledge of contemporary Australian cuisine and hotel kitchen operations.
- Ability to prepare and cook a wide range of breakfast, à la carte, and function menu items.
- Ability to work efficiently in a fast-paced, high-volume hotel kitchen while maintaining quality and consistency.
- Reliable, punctual, and committed to delivering high standards of food preparation and service.
- Strong teamwork and communication skills, with the ability to work effectively alongside chefs, kitchen staff, and front-of-house teams.
- Good knowledge of food safety, hygiene, HACCP, and workplace health and safety requirements.
- Skilled in food preparation, portion control, stock rotation, and safe food handling practices.
- Ability to follow recipes, instructions, and kitchen procedures while working under pressure.
- Solid organisational skills with the ability to prioritise tasks and maintain a clean and efficient work area.
Job Type: Full-time, Permanent;
Salary: $79,000 - $85,000;
