Market Bistro and Wine Store – Maroochydore QLD

Market Bistro and Wine Store is seeking an experienced Senior Grill Chef to join our culinary team. This is a full-time position based in Maroochydore, Queensland . As Senior Grill Chef, you will be responsible for leading our grill station, overseeing food preparation, maintaining exceptional standards, and mentoring junior kitchen staff. This role is pivotal to delivering the high-quality dining experience our guests expect, with particular focus on grilled specialities and wood-fired cooking techniques that define our menu.

Key responsibilities

- Lead and oversee all grill station operations, ensuring efficient workflow and consistent quality output during service periods
- Prepare and cook grilled dishes to the highest standards, including meat, seafood and vegetable specialities
- Maintain strict adherence to food safety protocols, hygiene standards and proper handling procedures
- Train, supervise and mentor junior chefs and kitchen staff on grill techniques, presentation standards and best practices
- Manage inventory of grill station supplies, monitor stock levels and communicate ordering needs to management
- Collaborate with the kitchen team and head chef to develop new grill-focused menu items and seasonal specials
- Ensure consistency in plating, portion control and presentation across all dishes prepared at the grill station
- Maintain and properly care for all grill equipment and cooking apparatus, reporting maintenance issues promptly
- Uphold food quality standards and respond to service issues with professionalism and efficiency

What we’re looking for

- Minimum 5 years' professional kitchen experience with at least 2 years specialising in grill cooking or a senior chef role
- Strong knowledge of grilling techniques, including chargrilling, woodfired cooking and temperature management for various proteins
- Proven leadership and mentoring experience with the ability to inspire and develop junior kitchen staff




- Food Safety Supervisor certification or equivalent food safety qualificationIn-depth understanding of Australian food safety standards and workplace health and safety requirementsExcellent organisational skills with the ability to manage multiple tasks simultaneously during service
- Strong communication and interpersonal skills, with ability to work effectively as part of a team
- Creative approach to menu development with knowledge of contemporary culinary trends
- Physical fitness and stamina to handle the demands of a busy kitchen environment
- Flexible approach to working hours, including evenings, weekends and public holidays as required
