Job Description

Reporting to the Director of Food & Beverage, the Assistant Food & Beverage Manager — TC's/Gaming leads the full operational and commercial performance of TC's.
You will be accountable for bar and gaming revenue, promotional strategy, regulatory compliance and the development of a high-performing team, while supporting the broader hotel Food & Beverage operations.
Deliver budgeted revenue, GOP and productivity targets across gaming and bar operationsGrow market share and local patronage through a venue-specific marketing and operational planLead service standards that build loyalty, repeat visitation and venue reputation, and lead by example in guest interaction and service recoveryPlan and execute gaming promotions that drive revenue while maintaining responsible gaming standardsManage relationships with Licensed Monitoring Operators and external gaming partnersMaintain operational excellence across gaming machines, floats,



surveillance and compliance documentationOversee daily bar operations and coordinate functions within TC's to maximise profitabilityWork with the Executive Chef and F&B; leadership on menus, standards and venue activationsEnsure full compliance with Queensland liquor and gaming legislation, OLGR requirements and RSA/RSG obligationsUphold the Responsible Gambling Code of Practice and manage problem gambling matters sensitivelyMaintain strict cash handling, key control and surveillance standardsLead, coach and develop the TC's team, and act as escalation point and mentor for SupervisorsManage recruitment, onboarding, training, compliance certification and succession planning
Qualifications
What you will bring to the role:
Proven leadership experience in a licensed bar and gaming venue, or a high-volume Food & Beverage outletCurrent RSA and RSG certification, and RMLV (or the ability to obtain prior to commencement)Working knowledge of Queensland liquor and gaming legislation and OLGR requirementsCommercial acumen — you can own a P&L;, roster to budget and explain a varianceExperience planning and executing gaming promotions within regulatory requirementsConfidence managing problem gambling matters sensitively and in line with the Responsible Gambling Code of PracticeA track record of leading,



coaching and developing teams, including performance management and succession planningStrong systems literacy across POS administration, stocktakes, reporting and audit documentationHigh emotional intelligence, self-awareness and interpersonal skills, with the ability to stay organised across competing prioritiesAvailability across a rotating roster including nights, weekends and public holidays
