About us
Toto Fish Bar is a Japanese fish bar coming to Glen Waverley -- fresh seafood, a fun team, and a concept that Glen Waverley has never seen before.
No egos, staff meals on us, and a real chance to shape something new from day one.
What you'll be doing
Prepare fish, seafood, rice, sauces and garnishes to spec
Nigiri, maki, sashimi -- knife work and plating on point, every order
Keep the station tight -- clean, labelled, organised
Food safety and hygiene done properly, every shift (raw fish handling, temp control)
Communicate clearly with FOH and the rest of the kitchen during service
Follow prep lists, flag low stock, minimise waste
Work rapid under pressure without dropping quality
(Sous Chef level)
Right hand to the Head Chef -- prep, service, organisation, the works
Hold the standard: quality, plating, portions, consistency
Own the prep lists, stock, ordering and waste
Develop the junior team and step up when needed

For Sous Chef applicants, these will stand out:
Food Safety Supervisor cert, or willingness to complete one
