Piggy Food Co is North Freo’s favourite craft beer bar! We are a well-established restaurant / bar seeking an enthusiastic and experienced kitchen manager/ head chef to join us in this wild ride of saucy meat and beer.

We are looking for long term employees who want to grow with us. We pride ourselves on being a valued part of the community and our focus is on supporting local and ethical producers in order to put out delicious, simple, fresh, interesting and quality food. Our menu features a blend of American and Mexican cuisine that is unique to Southern California, featuring Western Australian produce and free-range meats. We make nearly everything in house from rubs, spices, and awesome sauces to tortillas, cookies and ice cream sandwiches.

We are looking for a capable chef with industry experience and positive attention to detail to join our team. Strong communication, multitasking, and teamwork are vital to this role. Organizational skills and the ability to multi-task are a must.

We are open Wednesday-Sunday.

The Role

- $80k +/year plus 12% Super
- Ordering
- Day to day running of the kitchen and the pass
- Mondays and Tuesdays are rostered days off
- Long term stability

Head Chef: Position Description and Standards

Ensuring Standards and Responsibilities are Met

· Manages kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures

· Manages: Rubbish, Tea Towels, Grease Trap, Used Oil and any other necessary service suppliers

· Estimates daily and weekly prep needs and communicates them to kitchen team

· Manager suppliers and ordering;

- ­Woolies

- Meat and Veg Orders

- Seafood and Prawns

- Bidfood

- Infiniti

- Any other relevant kitchen orders

· Prepares and cooks foods of all types, either on a regular basis or for special functions

· Helps to develop, find or create new systems, suppliers, and menu specials to increase business profitability and efficiency

· Maintains purchasing, receiving and food storage standards

· Ensures compliance with food handling and sanitation standards

· Performs all duties of kitchen positions as necessary

· Ensures compliance with all applicable laws and regulations

· Ensures equipment maintenance is carried out and malfunctions rectified

· Checks the quality of raw and cooked food products to ensure that standards are met





· Checks or oversees the quality and quantities of deliveries

Leading Kitchen Operations

· Supervises and coordinates the day-to-day operations of the kitchen team

· Manages all Rosters and Timesheets in Deputy

· Leads, influences, and encourages others; advocates sound financial/business decision making; demonstrates honesty/integrity; leads by example

· Encourages and builds mutual trust, respect, and cooperation among team members

· Serves as a role model to demonstrate appropriate behaviours

· Maintains the cleanliness of kitchen and storage spaces

· Ensures employees understand expectations and parameters of their role

· Ensures all employees complete Training Log and Hiring Package (including all safety procedures)

· Conducts scheduled Performance reviews with all kitchen staff

· Establishes and maintains open, collaborative relationships with employees and ensures employees do the same within the team.

· Ensure Exceptional Customer Service standards are met

· Sets a positive example for guest relations

· Achieves and exceeds goals including performance goals, budget goals, team goals, etc.

· Identifies the developmental needs of others and coaching, mentoring, and helping others to improve their knowledge or skills.

· Brings issues to the attention of the business owners as necessary

Additional Responsibilities

· Provides necessary information to business owners, co-workers, and team by telephone, in written form, e-mail, or in person

· Schedules and oversees regular kitchen meetings

· Ensures par levels for are met for stock/inventory management levels

Job Type: Full-time

Pay: From $80,000.00 per year
