About Us

The Nuns’ Pool is a long-standing Cronulla icon known for its warm atmosphere, elevated coastal dining, and exceptional guest experience. We are entering a new phase of growth — expanding our offerings, refining our systems, and elevating our service standards across every touchpoint.

We’re looking for a highly capable, financially savvy, people-driven Manager to lead our Front of House operations and support the Director in executing the next evolution of the business.

Key Responsibilities

- Oversee and manage all day-to-day Front of House and Bar operations.

- Coordinate daily service and communication between FOH and kitchen teams.

- Prepare and manage staff rosters and payroll approvals within a 30% labour cost target.

- Assist in HR functions: recruitment, onboarding, training, and quarterly performance reviews.

- Ensure compliance with WHS, food safety, and employment standards.

- Monitor and manage key financial indicators (labour %, COGS %, revenue, profitability).

- Work closely with the Director to execute new business initiatives including Happy Hour and Dinner Service programs.

- Handle customer relations, feedback, and issue resolution with professionalism and care.

- Uphold The Nuns’ Pool’s brand reputation for excellence in service, culture, and presentation.

- Oversee financial operations including daily reconciliations, payroll approvals, accounts payable/receivable, and monthly reporting.

- Prepare and analyse Profit & Loss statements,



budgets, and forecasts, identifying variances and implementing strategies to optimise profitability.

- Monitor key financial metrics such as labour costs, COGS, and revenue to ensure targets and margins are consistently met.

- Liaise with external accountants for BAS, tax, and compliance matters while maintaining accurate financial records and internal controls.

- Provide strategic financial insights and recommendations to the Director to support business planning, pricing, and expansion initiatives

Skills & Experience

- Diploma or higher qualification in Business or Hospitality Management (preferred).

- Minimum 1 year experience in restaurant or hospitality operations management.

- Strong leadership and communication skills with a demonstrated focus on team development and operational excellence.

- Proven ability to manage financial KPIs in a high-volume environment.

- Strong problem-solving skills and the ability to stay calm, decisive, and solution-focused under pressure.

- Tech-savvy with competency in POS, rostering, and accounting platforms (e.g., SevenRooms, Xero, Deputy, etc.).

- Detail-oriented with a high level of professionalism, integrity, and organisational discipline.

- Strategic thinker with a hands-on approach suitable for a rapid-paced operation.
