This is a hands-on role. You’ll cook alongside the team during service, develop the restaurant menu and manage the day-to-day running of the kitchen.

The role is based at The Central Hotel Riverton and includes oversight of the kitchen at the Prince of Wales Hotel in Kapunda. You’ll work directly with the owners and kitchen teams to maintain consistent food quality, manage kitchen costs and develop menus suited to each venue.

responsibilities Lead day-to-day kitchen operations at The Central Hotel Riverton, including prep planning, station allocation, cooking and supervision during service. Oversee kitchen operations at the Prince of Wales Hotel in Kapunda, attending as required to support staff and review food quality, stock control and kitchen procedures. Develop menus and specials with the owners, taking into account seasonal ingredients, customer preferences and how dishes sell.

Prepare and cook dishes alongside the team, checking quality, portion sizes and presentation before meals leave the kitchen. Write standard recipes, calculate dish costs and monitor food costs, labour costs and wastage against kitchen budgets. Manage supplier relationships, purchasing, deliveries, stocktakes and stock rotation.

Coordinate kitchen rosters,



allocate duties and train cooks and kitchen hands in preparation, cooking and service standards. Oversee food safety and hygiene across both kitchens, including storage, temperature checks, allergen procedures and cleaning records. Coordinate with venue management and front-of-house staff on menu changes, service timing, dietary requests and customer feedback.

Qualification &

experience Certificate IV in Kitchen Management or Commercial Cookery, or an equivalent relevant qualification.

Experience as a Head Chef, Sous Chef or Senior Chef in a commercial kitchen, such as a pub, hotel, bistro or restaurant. Strong commercial cooking skills and the ability to lead a team through busy services. Demonstrated experience developing menus, costing dishes, controlling portions and managing stock and supplier orders.

Experience coordinating kitchen rosters, monitoring labour costs and training kitchen staff.

Current Food Safety

Supervisor certification and a sound understanding of allergen management and commercial kitchen hygiene. Availability to work evenings, weekends and public holidays as rostered, and to attend the Kapunda venue as required.
