As an Agave Production Operator, you'll be part of the core team responsible for processing harvested agave, operating distillery equipment, and maintaining production quality and efficiency. You'll work across agave preparation, cooking, juice extraction, fermentation support, and equipment maintenance. This role is ideal for someone who enjoys physical work, problem-solving, and being part of a growing craft-spirit operation.
Key responsibilities
- Receive, trim, split and prepare harvested agave for production
- Ensure agave is processed to required specifications
- Load agave into cooking vessels and manage cooking schedules
- Monitor production yields, quality parameters and workflow between farm and distillery
- Supervise processing of cooked agave into juice and adjust fermenter tanks to correct parameters
- Identify and resolve production bottlenecks or process issues
- Plan production activity based on raw material availability and business requirements
- Operate, maintain and troubleshoot distillery equipment, pumps, vessels, stills and associated infrastructure
- Conduct routine preventative maintenance and Cleaning-in-Place (CIP) procedures
- Maintain accurate maintenance records and support improvements to equipment reliability and production efficiency
About you
- Mechanically minded with experience in production, agriculture, distilling, brewing or similar environments
- Comfortable with physical work, outdoor conditions and hands-on tasks
- Robust attention to detail and commitment to safety
- Reliable, proactive and able to follow procedures accurately
- A team player who communicates clearly and works well with others
