The Role
We're seeking an experienced, hands-on Restaurant Manager who is passionate about hospitality, exceptional customer service, and leading a team to consistently deliver high standards.
This is a service-led management role, with a strong focus on the guest experience, team development, and ensuring the smooth day-to-day operation of both restaurant and bar service.
You'll lead from the front, confidently working across the floor and bar, setting the pace during busy services and creating a welcoming environment for our members, locals, and visitors.
Working closely with the Venue Manager, Head Chef, and Supervisors, you'll ensure seamless communication between departments, well-executed events, and a consistently high standard of food, beverage, and hospitality.
Key Responsibilities
Service & Guest Experience
- Lead daily restaurant and bar operations, ensuring smooth, professional, and welcoming service.
- Maintain exceptional standards of customer service, presentation, cleanliness,
and sequence of service.
- Build strong relationships with club members, regular guests, and the local community.
- Handle guest feedback and resolve service issues promptly and professionally.
- Work closely with the Head Chef to ensure menu knowledge, food quality, service timing, and guest expectations are aligned.
- Ensure the venue is consistently presented and service-ready.
Team Leadership & Communication
- Lead, motivate, and develop a confident, engaged front-of-house team.
- Conduct daily pre-service briefings, communicating reservations, events, menu changes, service priorities, and guest expectations.
- Foster clear communication between front-of-house, bar, and kitchen teams.
- Support recruitment, onboarding, training, and ongoing performance development.
- Create a positive, respectful, and collaborative team culture.
Operational & Commercial Management
- Prepare and manage staff rosters in line with sales forecasts, labour budgets, and operational requirements.
- Monitor labour performance and adjust staffing levels to balance service standards with commercial targets.
- Review and approve timesheets, ensuring accurate records and compliance with employment requirements.
- Support weekly forecasting, reporting, and operational planning.
- Work with the Bar Supervisor to ensure beverage availability and readiness for service, with cellar management, stocktakes, and inventory control managed by the Bar Supervisor.
Events & Stakeholder Coordination
- Coordinate the operational delivery of private functions, club events, and special occasions.
- Liaise with event organisers,
the kitchen, and bar teams to ensure events are planned and executed seamlessly.
- Conduct clear event briefings, ensuring staff understand run sheets, timings, responsibilities, and guest requirements.
- Work collaboratively with the Venue Manager, club representatives, and other key stakeholders.
- Support marketing initiatives, promotions, and events that enhance the guest experience and drive revenue.
About You
- Minimum 2 years' experience in a Restaurant Manager, Assistant Restaurant Manager, or comparable senior hospitality role.
- A genuine passion for hospitality, customer service, and creating memorable guest experiences.
- Solid restaurant and bar service experience, with the confidence to lead and work across both areas.
- Excellent communication skills and the ability to build strong relationships with guests, colleagues, and stakeholders.
- Sound commercial understanding, including rostering, labour management, forecasting, and working to budgets.
- Calm, approachable, and solutions-focused under pressure.
- Current NSW RSA certification.
Above all, you're a natural host and team leader. You understand that great hospitality is about the little things -remembering a regular's name, anticipating a guest's needs, supporting your team, and creating an atmosphere that keeps people coming back. Why Join Us?
- Competitive salary of $85,000–$95,000 + superannuation, plus tips.
- Work in one of Sydney's most beautiful waterfront settings.
- Supportive leadership with genuine development pathways across multiple venues.
- The opportunity to make your mark in a well-loved community venue.
- Free staff meal from the menu each shift.
- 30% off food and drinks at all Bird & Bear venues, plus 20% for friends and family.
If you're a passionate hospitality leader who loves being on the floor, developing great teams, and delivering outstanding service, we'd love to hear from you.
