About the Business

Romeo’s of Toorak is an iconic Melbourne restaurant that has been owned and operated by the Tannous family for four decades, trading in the heart of Toorak Village since 1985. Known for its relaxed and social atmosphere, Romeo’s offers diners excellent service in a warm and inviting environment and is often described as a Toorak institution, remaining a favourite of locals, celebrities, television personalities and sports stars alike. The kitchen is built around generous servings of quality, comfort, home-style Italian food, delivered consistently to a loyal and discerning clientele by a team of around twenty staff. The restaurant values hospitality, consistency and pride in the plate, and offers a stable, family-run workplace where standards are high and the menu has stood the test of time.

About the Position

Romeo’s of Toorak is seeking a full time Chef to join its kitchen in a newly created position. Reporting to the Head Chef, or the designated senior chef on shift, with overall oversight by the Manager, the Chef will run the larder section through every service, lead a team of four kitchen staff, and take responsibility for the preparation, cooking and presentation of salads, cold dishes, entrées and other assigned menu items to the restaurant’s established recipes and standards. In a high-volume Toorak Village restaurant whose reputation rests on delivering the same quality plate to every guest,

this position is central to consistency, food safety and the smooth coordination of service between the kitchen and the floor, and contributes directly to menu development and overall kitchen performance alongside management.

Key Responsibilities

- Organise daily larder preparation and mise en place to meet expected service requirements, and complete assigned opening and closing tasks.
- Prepare, cook, assemble and present salads, cold dishes, entrées and other assigned menu items to recipes and restaurant standards, ensuring consistency in taste and presentation.
- Run the larder section during service, prioritising tasks and coordinating timing and plating with kitchen and front-of-house staff.
- Direct and support the four kitchen staff working within the section, allocating tasks and maintaining standards throughout preparation and service.
- Check ingredients and dishes for freshness, quality, portion size, consistency and presentation before they leave the section.
- Monitor food quality, flavour consistency and presentation standards across all dishes.
- Receive and store deliveries, rotate ingredients, monitor section stock levels and report replenishment needs to the senior chef.

- Follow portion standards and use ingredients carefully to minimise food waste.
- Follow food safety, hygiene and workplace safety procedures at all times.
- Keep the section, equipment and storage areas clean, and keep section preparation lists up to date.
- Collaborate with management to improve menu offerings and overall kitchen performance.

Requirements

- Australian citizens and permanent residents are encouraged to apply.
- A minimum AQF Certificate IV in Commercial Cookery or higher (or equivalent); at least three years of relevant experience may substitute for formal qualifications.
- At least one year of relevant experience in a commercial kitchen environment, including larder or comparable section work.
- Ability to prepare and present menu items consistently during busy service, following recipes and preparation lists.
- Working knowledge of food safety, hygiene, safe food storage, cleaning and workplace safety procedures.
- Competence in receiving and storing deliveries, rotating stock, maintaining portion standards and controlling waste within a section.
- Good organisation, communication and teamwork, with the ability to direct a small section team during service and to follow reasonable directions from the Head Chef and senior chefs.
- Calm, reliable and focused under pressure, with availability to work a full-time roster in line with the restaurant’s service periods.
