And we're looking for an Assistant General Manager who knows how to bring the energy, lead from the front and make every service one to remember.

You'll be alongside our General Manager, helping shape the team, the culture and the experience that makes Gonzo, well... Gonzo.
From lively lunches to late-night dinners, you'll keep the floor moving, the team thriving and the good times rolling.

Here's what you'll get up to:

- Run the show: Lead the floor, manage service and make sure every guest leaves with a story worth telling.
- Bring the people: Recruit, coach and develop a team that's confident, passionate and full of personality.
- Own the experience: From reservations to guest recovery, make every interaction feel effortless and memorable.
- Know your numbers: Manage rosters, labour budgets, service KPIs and operational performance.
- Set the standard: Drive exceptional food, wine and service knowledge while encouraging a little individuality.
- Keep things sharp: Oversee POS, cash handling, compliance and safety without losing the fun.

YOUR KIND OF CRAZY?

We're after someone who takes hospitality seriously, but doesn't take themselves too seriously.
Someone who can command a busy floor, build a brilliant team and still find time to have a laugh along the way.

You'll bring:





- 2–3 years' leadership experience in a premium, high-volume restaurant or bar.
- A genuine love for food, wine, people and everything hospitality.
- Confidence managing teams, rosters, budgets and day-to-day operations.
- A natural ability to connect with guests and create memorable experiences.
- Solid communication, a hands-on attitude and the ability to think on your feet.
- A current NSW RSA
- Flexibility to work evenings, weekends and public holidays.

Bonus points if you love Italian hospitality, big personalities and a little organised chaos.
