About us
Johnny, Vince & Sam’s Ristorante celebrates the fun, energy and nostalgia of the Italian-Australian experience on Lygon Street. Inspired by the suburban homes of the 1970s and 80s, the restaurant feels like stepping into Nonna’s living room. It’s lively, welcoming and a little bit cheeky.
Our guests come for generous plates of simple, comforting Italian food that blends tradition with playful creativity, and they stay for the warmth, the service and the sense of humour that come with it. Behind the scenes we’re a close-knit team that values community, authenticity and having a good time doing great work.
The role
We’re looking for a Restaurant Manager to lead the venue day to day and make sure every guest leaves happier than they arrived. You’ll run the floor during busy services, lead and develop the front-of-house team, and work closely with the kitchen so service runs smoothly from the first booking to the last espresso.
Your responsibilities will include rosters, recruitment, training and performance conversations, as well as managing reservations, events and peak periods. You’ll handle guest feedback with care and confidence, maintain operating procedures and service standards, and keep the venue clean, safe and compliant with food safety and liquor licensing requirements. You’ll also work with the leadership team on revenue, labour and cost targets.
Most importantly, you’ll set the tone, building a positive and inclusive culture where the team feels supported and guests feel like family.
About you
You’re a natural host with genuine warmth and energy,
the kind of person who lifts the room and leads by example on the floor. You lead collaboratively rather than from behind a desk, and you get the best out of people by bringing them with you. You’re calm under pressure, organised, and you take pride in the details that turn a good night out into a memorable one.
What you’ll bring
- At least 3 years’ restaurant management experience in a high-volume, upscale casual venue
- A genuine passion for hospitality and a track record of delivering outstanding, inclusive guest experiences
- Experience recruiting, training and leading front-of-house teams, including rostering and performance management
- Excellent communication skills and the ability to work seamlessly between the floor and the kitchen
- Solid food and beverage knowledge, ideally including Italian cuisine, plus solid floor and bar service standards
- Strong organisational and problem-solving skills, with the ability to stay composed during busy services
- A sound understanding of food safety, hygiene and liquor licensing requirements in Victoria
- Current RSA, with a Food Safety Supervisor certificate highly regarded
- Availability to work evenings, weekends and public holidays as required
Why join us
You’ll be joining a much-loved Lygon Street venue backed by a passionate hospitality group, with a team that genuinely enjoys working together and real scope to put your stamp on the guest experience.
To apply, please submit your CV and a short cover letter telling us what great hospitality means to you.
