Super Taco
Melbourne
About us
Super Taco is a tiny, vibrant taquería on Crossley Street in the Melbourne CBD, inspired by the taquerías and street carts of Mexico City. It's small and built around fresh tortillas, four tacos made to order, an open kitchen, the salsa bar, and the connection between staff and guests.
About the role
We're looking for a cook or chef to make our tortillas (early morning hours) and work across the kitchen on other shifts, including nights. The tortillas are the foundation of everything we serve, so this is a role for someone who takes pride in doing things properly. It suits an experienced cook who works quickly, stays organised under pressure and takes initiative. We want someone who's here for the long run and wants to grow with the business.
Key responsibilities
Tortilla mornings (two days a week, around 6 hours)
- Make our fresh tortillas from scratch, following our process and recipes.
- Hold every batch to the same standard, without shortcuts.
- Work cleanly, safely and efficiently so everything is ready before service.
Other shifts, including nights
- Complete food preparation, mise en place and the daily prep list before service.
- Work the grill, spit and line through the lunch and dinner rush: steak, meats and plating.
- Cook to order and in sequence, working in step with the front counter so orders go out in order and nothing is missed.
- Work efficiently with the team during busy service while keeping food quality and consistency.
- Know every dish's ingredients, allergens and cooking process, so dietary questions are answered correctly.
- Keep the salsa and toppings bar stocked and fresh, with help from the counter host.
- Assist with stock control, deliveries and minimising food waste.
- Work closely with the head chef and the whole team.
- Clean as you go, help with washing up, and open and close the kitchen properly, following food safety procedures.
About you
- Friendly, positive and fun to work with.
- Experience with Mexican cuisine, tortilla making or bread making is a strong advantage.
- A genuine interest in Mexican food and cooking.
- Experience cooking at high volume in a quick-paced kitchen.
- A capable all-round cook, comfortable on the grill, in prep and with cleaning.
- Solid food safety knowledge and practice.
- Works well under pressure and keeps calm and focused in an open kitchen (in full view of guests).
- Comfortable working in a small kitchen with a tight team.
- Learns systems quickly and follows them consistently.
- Reliable with early starts. The day's service depends on the tortillas being ready.
- Organised, honest and able to work to a high standard on your own.
- Uses initiative and works well in a team.
- Looking for a long-term role and keen to take on more as we grow.
Benefits
- Award-based pay at the right level for your experience.
- Regular shifts across Tuesday to Saturday.
- Tacos every shift.
- A small team with an open kitchen, where your work is seen and valued, and you'll learn across both front and back of house.
- Progression: grow with the business.
How to apply
Send your CV and a short note to [email]. Tell us about your experience (including notes around any experience with Mexican cuisine, dough, bread or tortillas) and why you'd like to join a small kitchen for the long term.
