Our restaurants are known for authentic Greek food, a lively atmosphere, celebrations and memorable dining experiences.
At YASSAS Southbank, our riverside location attracts a diverse mix of diners, tourists, corporate guests and celebrations. We are looking for an experienced, energetic and commercially minded Bar Manager to lead our bar operations and elevate the beverage experience.
Position Overview
The Bar Manager is responsible for the overall performance of the bar, including beverage quality, team leadership, guest satisfaction, stock control, profitability and operational efficiency.
This is a hands-on leadership position, not simply a supervisory role.
The successful candidate must be comfortable working behind the bar during busy services while also taking responsibility for improving systems, developing staff and growing beverage revenue.
Key Responsibilities
1. Bar Operations and Service Excellence
- Oversee the daily operation of the bar across lunch, dinner, weekends and special events.
- Maintain consistently high standards of beverage preparation, presentation and service.
- Ensure cocktails, wines, beers, spirits and non-alcoholic beverages are served correctly and efficiently.
- Maintain service speed during peak periods without compromising quality.
- Ensure the bar is fully prepared before each service, including garnishes, glassware, ice, stock and equipment.
- Maintain a clean, organised and professional bar environment.
- Work closely with the floor team and kitchen to ensure smooth service coordination.
- Proactively engage with guests and resolve beverage-related concerns.
2. Team Leadership and Development
- Lead, coach and motivate bartenders and bar support staff.
- Conduct practical beverage training, including cocktail preparation, wine knowledge, service standards and responsible alcohol service.
- Establish clear opening, closing and daily preparation procedures.
- Monitor team performance and provide regular constructive feedback.
- Support recruitment, onboarding and training of new bar employees.
- Promote accountability, teamwork, professionalism and a positive workplace culture.
- Lead by example during busy shifts.
3. Beverage Sales and Revenue Growth
- Take ownership of improving beverage sales and average beverage spend per guest.
- Train the team to recommend wines, cocktails, premium spirits and other suitable beverages.
- Identify opportunities to increase beverage sales through food pairings, promotions and seasonal offerings.
- Work with management to review and improve the beverage menu.
- Monitor the performance of individual beverages and identify slow-moving products.
- Support beverage requirements for celebrations, functions and special events.
4. Stock Control and Cost Management
- Manage beverage ordering, stock levels and supplier coordination.
- Conduct regular stocktakes and investigate variances.
- Monitor beverage costs, wastage, spillage and overpouring.
- Maintain accurate recipes, portion sizes and pouring standards.
- Ensure stock is stored correctly and rotated appropriately.
- Minimise unnecessary expenditure and improve bar profitability.
- Monitor glassware breakages and equipment maintenance.
5. Operational Systems and Reporting
- Maintain accurate beverage items, pricing and modifiers in the POS system in coordination with management.
- Ensure stock and ordering procedures are followed.
- Review beverage sales, stock usage, wastage and operational performance.
- Provide regular updates to the Venue Manager on bar performance, challenges and opportunities.
- Identify and implement operational improvements.
6. Compliance and Safety
- Ensure compliance with Victorian liquor licensing requirements and Responsible Service of Alcohol (RSA) obligations.
- Maintain appropriate food safety, hygiene and cleaning standards.
- Ensure safe storage and handling of alcohol, chemicals and equipment.
- Monitor responsible alcohol consumption and manage intoxication-related situations professionally.
- Maintain a safe working environment for employees and guests.
Required Experience and Skills
- Previous experience as a Bar Manager, Assistant Bar Manager or senior bartender in a busy restaurant or hospitality venue.
- Strong cocktail preparation, wine, beer and spirits knowledge.
- Demonstrated experience leading and training bar teams.
- Understanding of beverage costing, stock control and inventory management.
- Excellent customer service and communication skills.
- Ability to work effectively under pressure.
- Strong organisational skills and attention to detail.
- Commercial awareness and a results-driven approach.
- Current Victorian RSA certification.
Experience in a high-volume restaurant, premium casual dining venue or functions environment will be highly regarded.
Key Performance Indicators
Performance will be assessed against:
- Beverage revenue and average beverage spend per guest.
- Beverage cost percentage and gross profit.
- Stocktake accuracy and stock variance.
- Wastage and breakage reduction.
- Beverage preparation and delivery times.
- Guest satisfaction and beverage-related feedback.
- Staff training completion and performance.
- Bar cleanliness, readiness and compliance.
- Successful implementation of operational improvements.

A successful Bar Manager at YASSAS Southbank will:
- Run a well-organised and efficient bar, even during peak service.
- Develop a confident, knowledgeable and motivated bar team.
- Consistently deliver high-quality beverages.
