At Souvlaki GR, we’re looking for a Multi-Site Restaurant Manager to oversee 5–6 company-owned restaurants, building strong teams and delivering consistent results across every location.

This is an opportunity for an experienced multi-site operator or a proven Restaurant Manager ready to step up. You’ll work closely with our leadership team, take ownership of your restaurants’ performance and have room to grow as the business develops.

The role

You’ll spend your time across your restaurants, rotating regularly between locations and working alongside the store’s teams, including during busy nights and weekends.

Your focus will be on building each restaurant’s ability to perform consistently. That means developing capable managers, setting clear expectations and following through on the details that make a restaurant successful.

You’ll understand the numbers behind each site and turn them into practical action, balancing sales, food costs and labour with great food and service.

What you’ll own

- People and leadership: Recruit, coach and develop Restaurant Managers and team members. Build strong teams at every site, address performance issues and develop future leaders.

- Food costs and COGS: Manage ordering, stocktakes, portion control and waste. Identify variances and work with each team to achieve food cost targets.

- Labour performance: Guide rostering and deployment to match trade, meet labour targets and maintain service standards.

- Sales and profitability: Review restaurant results, identify opportunities and put clear plans in place to improve performance.

- Restaurant standards: Maintain consistent food quality, customer service, cleanliness, food safety and workplace safety across all locations.

- Accountability:



Set priorities with each store, review progress and ensure agreed actions are completed.

- Reporting: Give the leadership team a transparent view of results, challenges and the actions underway across your restaurants.

What you’ll bring

You’re a hands-on restaurant leader who is comfortable with both people and numbers. You can support a team through a challenging service, have a constructive performance conversation and explain what needs to change when costs are off target.

You’ll bring

- Proven management experience in busy QSR, fast casual or restaurant operations.

- Demonstrated experience managing COGS, labour budgets and restaurant performance, with examples of results you’ve achieved.

- A strong record of recruiting, coaching and developing teams.

- The ability to deliver results through Restaurant Managers, with clear direction and consistent follow-through.

- Confidence using rostering, stock control, POS and reporting systems.

- Strong organisation and the ability to prioritise across multiple locations.

- Availability to work nights and weekends, including peak trading periods.

- The ability to travel regularly between your allocated restaurants.

Previous multi-site experience is highly regarded. We also welcome applications from high-performing Restaurant Managers who can demonstrate the leadership and commercial capability to take the next step.
