GamaGama Indian Restaurant is a popular dining destination in Bentley, WA, known for serving rich, authentic Indian cuisine with a strong focus on South Indian specialties and extensive vegetarian options. We are looking for a passionate, experienced Full-Time Chef specializing in Indian and South Indian cuisine to lead our kitchen team and elevate our menu.

Key Responsibilities

- Culinary Preparation: Prepare, cook, and present authentic North and South Indian dishes (including dosas, idlis, curries, biryanis, and traditional snacks) following established recipes and quality standards.
- Kitchen Management: Oversee daily kitchen prep, service operations, stock levels, and food ordering to ensure smooth service.
- Menu Execution & Specials: Assist in refining current recipes, maintaining consistent portion control, and developing authentic daily/seasonal specials.
- Food Safety & Hygiene: Ensure strict adherence to Australian food safety standards, HACCP principles, kitchen hygiene, and workplace health & safety regulations.
- Speed & Consistency: Maintain high efficiency and quality output during peak dining hours.

Requirements & Qualifications

- Experience: Minimum 2–3 years of hands-on experience as an Indian Chef,



with solid expertise in South Indian cuisine (traditional batters, chutneys, tiffin items, and regional curries).
- Qualifications: Certificate III / IV in Commercial Cookery (or equivalent qualification) preferred, or substantial industry experience.
- Product Knowledge: In-depth knowledge of authentic Indian spices, flavor profiling, traditional cooking techniques, and dietary preferences (vegetarian, vegan, gluten-free).
- Work Rights: Full working rights in Australia.
- Skills: Strong communication skills, ability to work well under pressure, and a team-oriented mindset.

Operating Hours & Shift Expectations

This is a full-time position requiring flexibility across our operating schedule (including weekend split shifts and evenings):

- Monday: Closed
- Tuesday to Friday: 5:00 PM – 9:30 PM (plus prep hours)
- Saturday & Sunday: 12:00 PM – 3:30 PM & 5:00 PM – 9:30 PM (split shifts)
