About Us
Borsa Pasta Cucina is an authentic Italian restaurant located in the heart of the Adelaide CBD. We pride ourselves on delivering a premium, traditional dining experience centered around our signature house-made fresh pasta, curated Italian wine lists, and a warm, bustling atmosphere. As we look to expand our footprint, capture new market segments, and elevate our brand, we are seeking a entrepreneurial, dual-skilled Executive Chef / Venue Manager to lead our kitchen, front-of-house, and business growth strategies.

The Role
This is a unique, hands-on hybrid leadership position designed for a hospitality professional with a strong business mindset. While maintaining absolute creative control over our authentic Italian menu and daily operations, you will actively drive the venue's financial growth. You will bridge the gap between kitchen precision, exceptional guest relations, and strategic business development, ensuring Borsa remains both a beloved local institution and a highly profitable commercial enterprise. Key Responsibilities

- Business Development & Revenue Growth: Formulate and execute local marketing initiatives, corporate partnerships, and catering strategies to drive mid-week trade and private functions.
- Kitchen Leadership: Oversee menu development, inventory control, food costing, portion control, and waste management while maintaining strict authentic Italian quality standards.
- FOH & Operations: Manage front-of-house operations, optimise table turn-times, and maintain an exceptional guest floor presence that drives repeat business and loyalty.
- Community & Brand Engagement: Act as the "face of the venue," building strong relationships with CBD corporate clients, local concierges, and regular patrons to boost brand visibility.
- Staff Management: Recruit, train,

roster, and mentor both kitchen hands and front-of-house staff to foster a positive, sales-focused, and cohesive team culture.
- Financial Accountability: Manage labour costs, supplier invoices, and overall venue profitability, using data-driven insights to identify new revenue streams.
- Systems & Compliance: Oversee restaurant tech stacks (such as reservation platforms, CRM tools, POS, and inventory software) while enforcing absolute compliance with food safety and HACCP regulations.

Skills & Experience Required

- Experience: A minimum of 3 years of experience in a Head Chef, Executive Chef, or dual Kitchen/Venue Management role, with a proven track record of growing venue revenue.
- Business Acumen: Strong entrepreneurial spirit with experience in driving functions, corporate packages, local area marketing, or digital brand engagement.
- Cuisine Expertise: Deep knowledge of authentic Italian cuisine, traditional sauces, and a strong background or proficiency in fresh pasta production.
- Leadership: Proven ability to run efficient dual-department teams, inspire high sales performance in FOH staff, and build a unified venue culture.
- Financial Metrics: Expertise in managing prime costs (labor + COGS), maximizing profit margins, and leveraging reservation tech to increase seat occupancy.

What We Offer

- Competitive starting salary from $90,000 per year, plus superannuation.
