Retail Manager (Store Manager) Sushi Fusion Au Pty Ltd — Yagoona NSW Location: Shop 3/44 Dargan Street, Yagoona NSW 2199 Employment type: Full-time, permanent Hours: 38 hours per week Salary: $80,000 per annum plus superannuation ABOUT US Sushi Fusion Au is a popular, modern sushi shop with stores in Yagoona and Punchbowl, and a third store opening soon. With a large following on social media, we are growing quickly. As part of this expansion, we are looking for an experienced full time Retail Manager (Store Manager) to lead our Yagoona store.

THE ROLE Reporting to the business owners, you will manage the day-to-day operations of the Yagoona store. You will be responsible for its menu, stock, staff, sales and service standards, and for delivering fresh, high-quality sushi to our dine-in, takeaway and delivery customers. KEY RESPONSIBILITIES

- Determining the store's product mix, including sushi rolls, nigiri, sashimi, bento and side dishes, together with stock levels of fresh seafood, rice and ingredients, and service standards.
- Formulating and implementing purchasing policies with seafood and ingredient suppliers, implementing marketing policies, and setting menu prices.
- Promoting and advertising the store's products and services, including in-store promotions and social media campaigns.
- Selling to customers and advising them on menu items, ingredients and allergens.




- Maintaining records of stock levels, wastage, sales and financial transactions, including POS and daily cash reconciliation.
- Preparing and managing the store budget, including food costs, labour costs and sales targets.
- Controlling the selection, rostering, training and supervision of staff.
- Ensuring compliance with work health and safety regulations and food safety standards, including correct handling and temperature control of raw seafood.

ESSENTIAL CRITERIA

- At least two years of experience in a similar store or restaurant management role.
- The ability to work in a fast-paced environment.
- Excellent communication and customer service skills.
- Full-time availability, including weekends as rostered.

QUALIFICATIONS

- A relevant qualification in business or management.

A degree in business management is highly desirable.

- At least three years of relevant experience may substitute for formal qualifications.

In some instances, relevant experience or on-the-job training may be required in addition to a formal qualification.

- Registration or licensing may be required, including a NSW Food Safety Supervisor certificate, or a willingness to obtain one.

DESIRABLE

- Previous experience in a sushi or Japanese food business.
