Task & responsibilities
- Plan and develop seasonal menus, and estimate food and labour costs.
- Prepare, cook and present dishes to menu specifications and quality standards.
- Supervise, train and coordinate cooks and kitchen hands.
- Order and manage stock, and monitor quality, wastage and cost control.
- Maintain food safety, hygiene and WHS standards, including HACCP procedures.
- Ensure consistency in portion control and presentation during busy services.
- Work with front-of-house and management on events, functions and menu changes.
Qualification & experience
- A minimum of 3 years’ experience as a Chef in a commercial kitchen.
- Certificate IV in Commercial Cookery or equivalent (preferred). Demonstrated experience in menu planning, costing and kitchen supervision. Robust knowledge of food safety requirements and kitchen operations.
- Excellent leadership, organisational and time management skills. Flexibility to work weekends, evenings and public holidays as required.
