The Hotel by Levantine Hill | Coldstream, Yarra Valley
Build it. Open it. Make it exceptional.
The Hotel by Levantine Hill is a new 33-suite luxury hotel within Levantine Hill Estate. Designed by Fender Katsalidis, it brings together considered architecture, wine, dining, events and the Yarra Valley landscape in an intimate setting.
We’re seeking a polished, hands-on Rooms Division Manager to lead both Front Office and Housekeeping, creating an exceptional guest experience while ensuring every suite and shared space is presented to exacting luxury standards. You’ll play a key role in preparing the hotel for opening and shaping how its rooms operation runs.
The Opportunity
This is a broad, operational leadership role with direct responsibility for the daily performance of Front Office and Housekeeping. From pre-arrival planning and personalised welcomes to immaculate suite presentation, efficient room turnaround and thoughtful service recovery, you’ll bring the entire rooms experience together.
Reporting to the Hotel Manager and working closely with the wider Estate team, you’ll recruit, coach and lead your teams; establish practical systems and service standards; manage labour and resources; and remain visible and hands-on in an intimate luxury hotel. You’ll also connect guests with the Estate’s wine, dining, cellar door, events and local experiences.
What you will lead
- Pre-opening readiness across Front Office and Housekeeping, including team recruitment, training, operating procedures, checklists, systems testing, room set-up, standards and opening rehearsals
- Direct day-to-day management of the Housekeeping function, including team supervision, rostering, workload allocation, productivity, quality assurance and performance management
- Immaculate presentation and cleanliness of all 33 suites, public areas and back-of-house spaces within the department, with regular room inspections and consistent luxury standards
- Housekeeping supplies and controls, including linen, laundry, guest amenities, equipment, stock levels, purchasing and cost-conscious resource use
- Room readiness and inventory coordination across Front Office, Housekeeping and Maintenance, with timely defect reporting, follow-up, preventative care and efficient suite turnaround
- The complete guest journey, from pre-arrival communication and personalised welcomes to suite orientation, in-stay support, departures and follow-up
- Guest recognition, profiles, preferences, VIP arrangements, special requests and calm, accountable service recovery
- Front Office operations, including reservations accuracy, room allocations, billing, payment controls, shift handovers, night-audit oversight and guest communications
- Rooms Division budgets, labour planning, rostering, cost control, reporting and operational performance, balancing guest expectations with commercial discipline
- Distribution and inventory accuracy, working with the Hotel Manager and revenue specialists on rates, packages, availability, channel controls and revenue priorities
- Effective use of the PMS, guest-journey technology and room-status systems, supported by clear communication and reliable operating routines
- Close collaboration with the Estate’s restaurant, wine, cellar door, conference and events teams to deliver a seamless and distinctive stay
About you
You’re an accomplished and approachable hotelier who sees the Rooms Division as one connected operation. You pair genuine warmth and discretion with a sharp eye for detail,
robust people leadership and sound financial judgement. You’re as comfortable inspecting a suite or helping a guest as you are coaching a team, reviewing a roster or resolving an operational issue.
You’ll bring:
- At least five years’ progressive experience in Front Office, Rooms Division or hotel operations, including demonstrated management responsibility in an upscale or luxury hotel
- Practical experience directly leading or overseeing Housekeeping, with a sound understanding of room cleaning standards, inspections, linen controls, room turnaround and departmental productivity
- Experience supporting a hotel pre-opening, opening, repositioning or significant operational transition
- Strong luxury-service capability, including guest personalisation, VIP handling, service recovery and a consistent eye for presentation
- Commercial awareness across rooms operations, staffing budgets, labour costs, reservations, rates, inventory and distribution
- Confidence with hotel PMS and operational systems, reporting, training, rosters and standard operating procedures
- A hands-on, collaborative leadership style, clear communication and sound judgement under pressure
- A genuine interest in wine, food and destination hospitality, with enthusiasm for connecting guests to the Estate
Why this role matters
At a 33-suite luxury hotel, exceptional stays depend equally on the warmth of the welcome and the quality of every room detail. As Rooms Division Manager, you’ll take ownership of both, building a capable team, rigorous Housekeeping standards, smooth Front Office operations and a consistent, highly personalised guest experience from day one.
If you’re ready to help open a distinctive wine-country hotel and lead its complete Rooms Division, we’d like to hear from you.
The Hotel by Levantine Hill is managed by Gatehouse Hospitality.
