The Gig

Balmoral has started an exciting new chapter. Head Chef Ty Bellingham is leading a relaxed new venue spirit built on bold, vibrant Southeast Asian flavours and a deep respect for quality produce. Think fire, spice, freshness and a lot of flavour.

We’re looking for several full-time Chefs de Partie to help bring it to life. You’ll own your section, sharpen your skills alongside a passionate and experienced crew, and help shape what this kitchen becomes.

What you’ll be doing

Depending on your section and the day, you’ll be:

- Running your section. It’s yours, so own it,



from prep to pass.
- Cooking food you’re proud of, every plate, every service, to a high standard.
- Keeping the engine room tight: ordering, receiving, storage and stock rotation.
- Setting the standard for food safety, cleanliness and WH&S.;
- Passing it on by training, mentoring and backing our junior chefs.
- Helping the team grow in product knowledge, techniques, systems and tech.
- Working as one crew to deliver a dining experience guests keep talking about.

Who we’re after

You’ve done at least 2 years as a chef in a fast, high-volume kitchen. A full board doesn’t rattle you. You stay organised, resilient and calm when it’s busy. You’re also:

- Someone who motivates the people around you
- Happy to teach new techniques across any section and keep quality and presentation high
- Confident, with a can-do attitude
- Friendly, approachable and genuine
- A team player who likes to collaborate
- Ideally you’ll hold a Certificate III in Commercial Cookery (or similar), or an international equivalent.
