The Coffee Club Sydney Olympic Park is looking for an experienced Chef to join the team: someone who enjoys a quick kitchen and can hold two menus to a high standard from breakfast through to dinner. The site at 8 Australia Avenue trades under two brands each day. From 7:00am to 3:00pm it is The Coffee Club, part of the Australian café franchise that began in Brisbane in 1989, serving coffee, all-day breakfast and lunch alongside its own Chef’s Specials. From 2:00pm to 9:00pm it becomes Burgers with Bite, a dine-in and takeaway venue known for burgers, pizza, tacos, share plates and an evening specials menu of steaks, salmon, pasta and seafood. Open up to 14 hours a day, seven days a week, it serves locals, workers, visitors and event-day crowds around the precinct.
The Coffee Club & Burgers with Bite | Chef | Sydney Olympic Park, NSW
Key Responsibilities
· Cook and plate dishes from both menus each day, from big breakfasts, corn fritters and eggs benedict in the morning to burgers, pizza, schnitzel, steaks, salmon and seafood baskets at night, and keep pace with the extra covers that come with event days in the precinct.
· Keep the kitchen clean and safe by making sure every staff member understands the food safety and hygiene rules, including temperature checks, allergen handling and cleaning schedules, and step in straight away when standards slip.
· Plan and refresh the Chef’s Specials for the café and for the Burgers with Bite dinner menu, work out the food and labour cost of each dish, and order stock from suppliers so the kitchen is ready for normal trade and for busy event days.
· Check food at every step, from deliveries and prep through cooking to the pass,
so Coffee Club dishes match the franchise recipes and presentation standards and every Burgers with Bite plate looks and tastes the same each time.
· Show cooks and kitchen hands how to prepare new dishes, guide them on cooking methods, timing and plating, and help choose and train new kitchen staff as the team grows or changes.
· Talk through prep problems, menu changes and special requests with the venue managers, the kitchen team and floor staff, including dietary needs and allergy orders, so the front and back of house work as one during service.
· Make house sauces, marinades, stocks, batters and fillings ahead of service, then portion, label, date, chill or freeze them correctly so stock is rotated, used in time and waste is kept low.
· Run the afternoon changeover when the café menu winds down and Burgers with Bite opens, set up and close down stations, and keep dine-in, takeaway and delivery orders moving on time for both brands.
Qualifications and Experience
· At least 1 year of relevant experience as a Chef.
· AQF Associate Degree, Advanced Diploma or Diploma.
· Experience in a busy café, bistro or casual dining kitchen will be well regarded.
Hours: 38 hours per week - Full-time
Salary: $75,000 to $85,000 plus superannuation per annum
Personal Attributes
We are looking for someone who is:
· Calm and organised when dockets stack up on busy mornings and event nights.
· A clear communicator with the kitchen team and floor staff.
· Happy to work a rotating roster that includes early starts, evenings and weekends.
How to Apply
