Pasta Chef / Chef de Partie

We're looking for an experienced and motivated Pasta Chef / Chef de Partie to join our kitchen team at Il Mercato Centrale Melbourne.

We're after someone who is confident working independently, has a strong understanding of Italian cuisine and can take ownership of their own pasta section, from preparation through to service.

Key Responsibilities

- Preparing and cooking a variety of pasta dishes to a consistently high standard
- Preparing sauces, stocks and other ingredients from scratch
- Managing your own pasta section, including daily preparation and service
- Monitoring stock levels, placing orders and managing inventory
- Maintaining portion control, food quality and consistency
- Minimising food waste and assisting with food cost control
- Maintaining a clean, organised and efficient workstation
- Following food safety, hygiene and kitchen procedures
- Working collaboratively with the wider kitchen team to ensure smooth service
- Working closely with management to develop and refine menus, seasonal dishes and weekly specials
- Contributing new ideas and improvements to existing recipes and kitchen operations

What We're Looking For

- Previous experience as a Pasta Chef, Chef de Partie or similar role
- Strong knowledge of Italian cooking techniques,



particularly pasta and sauce preparation
- Ability to confidently manage a section with minimal supervision
- Experience with stock ordering, inventory management and food preparation planning
- Strong organisational and time management skills
- Ability to work efficiently under pressure during busy services
- A proactive attitude, reliability and attention to detail
- Understanding of Australian food safety and hygiene standards

Availability Requirements

- Flexible availability across lunch and dinner services
- Weekend availability, including Friday and Saturday, is essential
