Bella Venezia Restaurant The Restaurant Manager is responsible for the overall leadership, performance, and reputation of the restaurant, ensuring an exceptional guest experience aligned with Chef Hat standards. This role requires uncompromising attention to detail, refined service leadership, and strong commercial acumen.

The Restaurant Manager is the custodian of the guest journey, brand standards, and operational excellence, ensuring the venue consistently delivers world-class hospitality while achieving financial performance targets.

Task & responsibilities Lead and oversee all front-of-house operations to deliver seamless, polished, and memorable service.

Uphold and protect Chef Hat service standards across every shift and service period. Curate and oversee the complete guest journey from reservation to departure, ensuring personalised and anticipatory service. Lead daily pre-service briefings with a focus on menu knowledge, wine pairings, guest notes, and service precision.

Recruit, train, mentor, and develop a high-performing service team aligned with premium dining expectations. Manage workforce planning and rostering in line with labour budgets and premium service ratios. Monitor and control wage costs, productivity benchmarks, and operational efficiencies.

Maintain deep knowledge of menus, seasonal changes,



provenance of ingredients, and culinary philosophy. Oversee beverage program execution including wine service standards, stock control, and cost management. Work collaboratively with the Head Chef to ensure cohesion between kitchen and front-of-house operations.

Oversee reservation strategy and seating optimisation without compromising guest experience. Professionally manage guest feedback and resolve concerns with discretion and care. Ensure compliance with liquor licensing, RSA requirements, workplace health & safety, and food safety regulations.

Monitor financial performance including revenue targets, labour percentage, cost control, and profitability. Maintain presentation standards across the venue including cleanliness, ambience, and team grooming. Implement, review, and refine SOPs to ensure operational excellence and consistency across the group.

Perform other reasonable duties as directed by the Operations Manager or Directors to support business objectives.

Qualification & experience Minimum 2 years’ experience as a Restaurant Manager or senior leader within a premium or award-recognised venue. Demonstrated experience managing labour budgets and financial performance indicators.

- Current RSA Certificate (required).
- Approved Manager’s Licence (required or ability to obtain).
- Experience with POS systems, reservation platforms, and financial reporting tools.

Wine or beverage qualifications (WSET or equivalent) highly regarded.

Bella Venezia is a fine-dining 150 seat Italian restaurant in the Mooloolaba dining precinct. We use a combination of local produce and authentic imported products to create artfully plated dishes, pizza and handmade pasta.
