Task & responsibilities

- Oversee the daily operations of Subway Colac, ensuring efficient store management and compliance with established operational standards.
- Recruit, interview and induct employees, supervise staff performance, monitor attendance, approve leave requests and maintain adequate staffing levels to meet business needs.
- Prepare staff rosters, allocate duties and coordinate employee training to support efficient store operations and consistent service delivery.
- Forecast stock requirements, liaise with suppliers, check incoming deliveries and manage stock rotation to maintain product availability, freshness and minimise wastage.
- Monitor inventory levels, coordinate stock ordering and stocktakes, investigate stock variances and implement appropriate stock control measures.
- Monitor sales revenue, labour costs and operating expenses to support the store's financial performance and profitability.
- Reconcile daily takings, oversee cash-handling procedures, prepare banking deposits and maintain accurate financial and operational records.
- Prepare and review management reports covering sales, labour costs, stock variances, wastage and overall operational performance, implementing improvements to control costs and enhance profitability.
- Ensure products meet required quality, freshness and presentation standards, and maintain compliance with Subway brand requirements, food safety standards, workplace health and safety obligations and applicable local council health regulations.
- Establish and maintain customer service standards,



monitor customer feedback and implement corrective actions to address complaints, service issues and recurring concerns.
- Oversee store cleanliness, organisation and presentation to maintain a safe and welcoming environment for customers and employees.
- Coordinate promotional activities and implement relevant marketing initiatives in line with Subway brand guidelines.
- Maintain accurate staff records, sales reports, inventory documentation and other business records required for effective store management.

Qualification & experience

- Relevant qualifications in retail management, business management, hospitality or a related field are desirable.
- Demonstrated experience in retail, food service or quick-service food business management.
- Experience in staff supervision, rostering, recruitment and employee training.
- Robust knowledge of inventory control, stock ordering, sales monitoring and cost management.
- Ability to analyse business performance and implement operational improvements.
- Strong leadership, communication, organisational and problem-solving skills.
- Knowledge of food safety, workplace health and safety, and relevant compliance requirements.
- Ability to manage competing priorities and work effectively in a fast-paced customer-facing environment.
