We are looking for an exceptionalHead Chefto lead the kitchen of our new Italian trattoria, bringing together authentic Italian cooking, traditional techniques and a contemporary approach to hospitality.

With a focus onfresh handmade pasta, charcoal-grilled cooking, premium seasonal produce and the traditions of Italian regional cuisine, this is an opportunity for a passionate chef to shape a kitchen, build a strong team and create a truly memorable dining experience.

THE ROLE

You will take ownership of the kitchen, leading from the front and setting the standard for food quality, consistency, presentation and service.

Your responsibilities will include:

- Leading, mentoring and developing a talented kitchen brigade.
- Demonstrating a strong understanding of Italian cuisine, regional traditions and authentic cooking techniques.
- Overseeing fresh pasta production, charcoal cooking and daily kitchen preparation.
- Developing menus that respect Italian tradition while embracing seasonality and quality produce.
- Managing food costs, stock control, ordering, waste and kitchen profitability.
- Preparing and managing staff rosters to meet operational and budget requirements.
- Maintaining exceptional standards of food safety, cleanliness and kitchen organisation.
- Working closely with the restaurant management team to deliver outstanding service and a consistent guest experience.

WHAT WE ARE LOOKING FOR

Italian culinary knowledge is essential.





We want a chef who understands Italian food beyond the recipes — someone who respects its traditions, appreciates the quality of ingredients and knows how to deliver authentic flavours consistently.

The ideal candidate will have:

- Proven experience as a Head Chef or a strong Sous Chef ready to take the next step.
- Excellent knowledge of Italian regional cooking.
- Hands-on experience with fresh pasta and charcoal grilling.
- Demonstrated ability to manage food costs, labour, rosters and kitchen operations.
- Strong leadership skills and the ability to build a motivated, professional team.
- A hands-on approach, a genuine passion for food and pride in every service.
- The commercial awareness to balance culinary excellence with a profitable operation.
