Justin Lane is one of the Gold Coast's most iconic venues — a rooftop bar and restaurant in the heart of Burleigh Heads that has been setting the standard for food, atmosphere and hospitality since 2011. We're known for our commitment to in-house production, traditional Italian technique, and the kind of experience people come back for again and again.

We're looking for a Head Chef who is as passionate about people as they are about food — someone ready to own a kitchen, lead a team, and take genuine pride in what goes on every plate.

About the Role

This is a full-time, permanent position reporting directly to ownership and our General Manager. You will have full leadership of the kitchen at Justin Lane Burleigh — a hands‑on role for someone who thrives in a high‑volume, high‑standard environment and wants to leave their mark on a venue with real culture and a loyal following.

Your Key Responsibilities

- Lead, develop and inspire the kitchen team — from onboarding through to day‑to‑day performance management
- Oversee all food preparation and production, maintaining our commitment to in‑house made pasta, sauces,



and baked goods
- Uphold and evolve our menu with a strong foundation in Italian technique and a creative eye for what's next
- Drive food cost management and inventory control — minimising waste and protecting margin without compromising quality
- Ensure full compliance with food safety, hygiene and WH&S; standards at all times
- Maintain a clean, organised and well‑functioning kitchen culture

What We’re Looking For

- Minimum 5 years' experience as a Head Chef or Senior Sous Chef in a high‑volume restaurant environment
- Demonstrated experience with Italian cuisine and in‑house production
- Solid leadership presence — someone who earns respect on the pass
- Ability to manage food costs and build rosters with commercial awareness
