When Rick Shores opened on the sands of Burleigh Heads in 2016, we knew we’d found somewhere pretty special. Right on the water, with the beach at our feet and the Gold Coast stretching out in front, it is the kind of iconic setting that makes a meal feel like more than a meal.

Ten years on, the view hasn’t changed, and neither has the feeling of sitting here, with the salty sea breeze rolling in, waves crashing on the shore and positive food on the table. And when the sun starts to go down, the view only gets better. There’s a reason people keep coming back to Rick Shores, and why so many first-time visitors quickly become regulars.

Our brigade is made up of many passionate people, all coming together for the shared reason of great food experience for each and every guest.

As our new Dumpling Chef you will have:

Proven experience as a dim sum, dumpling or Asian cuisine chef

Knowledge of traditional Chinese and pan-Asian cooking techniques and ingredients

Skills to prepare dough, wrappers and fillings from scratch

Strong hand-fold skills to shape a range of dumplings and dim sum (such as har gow, siu mai, xiao long bao,



gyoza, wontons and buns) to consistent size, pleat and weight

Cook dumplings by steaming, pan-frying, deep-frying and boiling to the perfect texture, colour and temperature.

Prepare dipping sauces, chilli oils, broths and accompaniments to venue recipes
